Because It’s Thursday Which is Basically Friday Which is Pretty Much the Weekend Cocktail: Watermelon Refresher

Ah, sweet summer. It’s all about sunny days, tan lines and getting weird in the warmth. One of the best part is that one of the best fruits is in season: the lovely lovely watermelon. They’re good in salads, on their own, and of course, mixed with vodka. So to stay in season, this week’s Because It’s Thursday Which is Basically Friday Which is Pretty Much the Weekend Cocktail is a sweet, cooling Watermelon Refresher.

Ingredients (makes 2 cocktails):

Processed with VSCOcam with c1 preset

1 and 1/2 cup watermelon

2 tablespoons lime juice

chilled vodka (enough to get the job done, baby)

enough sugar to fill the bowl (or splenda if you’re an asshole like that)

ice

Tools:

two martini glasses

blender or food processor

cocktail shaker

bowl (should be wider than the martini glasses)

Steps:

1.) To make the watermelon juice, cut the watermelon into chunks and throw it in the blender or food processor. Blend until the watermelon is as smooth as Chris Brown pre-Rihanna beat down (PS when are we done with him?!). If you want it a little pulp-y then keep it as is, but if you want just straight-up liquid, then go ahead and strain it.

2.) Fill the cocktail shaker with ice, then add the watermelon juice, lime juice and chilled vodka. Shake it like that god damn Taylor Swift song that has refused to leave our heads. Set aside.

3.) Time to prep the glasses! First cut a lime in half, then almost in half again so there’s a little slit. Just a little slit, girl.

4.) Run the two sides of the lime along the rim of the glass. Run it a few times to make it nice and s-t-i-c-k-y. Then dip the glass upside down into the bowl of sugar and circle it around a few times so it’s nice and covered.

5.) Pour the cocktail mixture into those sassy martini glasses and DRINK UP!
